Beans
Our vanilla beans are slowly cured to provide the richest
flavor and aroma
possible
in a bean. Curing begins after beans have been selected at their
peak ripeness and submerged in hot water for approximately three
minutes. The beans are then stored in cloth-lined wodden boxes
overnight and placed in the sun for one hour each day for 10-14
days. The beans are then placed in shaded curing houses to dry.
The selection process begins when beans are at approximately
25% moisture content. Beans are then stored for months to achieve
the richest flavor possible in a gourmet vanilla bean. like a
fine wine, vanilla gets better with age. It is this principle
of patience and dedication to cultivation and curing that permits
us delivering the very best bean in the world.
